does this model do time lapse?

Yes, has quite an advanced mode of time-lapse, on par with my Nikon D7100. Only problem is quite pitiful battery life, but if you use the DC coupler (B&H # PADMWDCC15 ) with an AC adapter if near mains or with an external battery no problem except adapting plugs. I use a Watson Sony NP-F770 series battery (B&H # WANPF770 4400mAh ) that came on an external on-camera LED light I bought, and I've done 4+ hour time-lapses with it, and battery indicator didn't drop below 3 bars.

Which underwater housing is suitable for the lumix dmc gm1 + standard lens kit?

Newer technologies makes one for about $400, but B&H doesn't carry it. They do carry lots of Newer products, so I would call them to ask for a special order.
