I have difficulty removing the detachable cable, is it supposed to be very snug when it is plugged in the headphone?

On my pair, the cable is not difficult to remove. The connection is secured by twisting the jack after it is plugged on. You can see that there is a groove on the jack for this locking mechanism. If that is not the issue, your pair may have a manufacturing anomaly.

can't see anywhere that this model specifically says that they are 'noise cancelling' or have a button on them to activate this feature.. can someone advise?

I had this headphones for couple of days, they are not noise cancelation headphones but they sound very good and I don't think you will have problem with the outside noise.

Yes it has standard 3.5 mm jack so no problem plug it in... and the remote works with any iOS device.I personally own a iPhone 6 and the remote works like a charm, plug it in and you are all set.

What Cain of amplifier is good for this headphones?

At 18 ohms, you don't need an amplifier to drive the headphone. These headphones are meant for portable use, so the low impedance is normal. If you want, you can look into DACs (digital analog converter) in order to get better quality in your music, but DACs (and amps) a very subjective topic all in itself and I suggest you do your own research on the matter. If you want suggestions:If you want something portable, FiiO E17 is a solid choice.For home use, you may think about the Objective2 with ODAC from Mayflower Electronics.
