Does anybody know why the list of compatible cameras does not include the OM-D E-M5 Mark III?
The Olympus EE-1 Dot Sight came out before OM-D E-M5 Mark III was released. That is why it is only listing the older camera. This will work on the OM-D E-M5 Mark III, and most any camera with a standard hotshoe.

will it work with a Sony handycam, specifically the AX53 with strong zoom to track fast flying birds or RC planes which may be difficult to see in its flimsy EVF ?
While it can work on a camera with a hot shoe, it hasn't been tested specifically with the Sony AX53. Your results may vary.

I don't get what this is supposed to do. It doesn't connect to the camera in any way? it doesn't control the auto focus of the lens? What exactly does it do?
It doesn't connect to the camera or its focus system in any way. All it does is provide a wide enough view through the sight that you can point your camera with a very long focal length lens at the subject accurately enough that (when the sight is properly calibrated to the camera/lens combo in use and approximate subject distance) that the subject will appear in the field of view of that lens. It makes it easier to get a really long lens lined up with your subject. It functions like the "finder scope" on an astronomical telescope which helps you get your subject within the field of view of the main telescope, if that helps.
