Headphones have a left and right speaker and are referred to as a pair because of that. I understand how that could be interpreted to sound like 2 sets of headphones are included but that is how they have been referred to for a long time. Sorry for the inconvenience.

I would like to use 2 sets of RS 175 headphones ...

I would like to use 2 sets of RS 175 headphones on 2 different Samsung Smart tv’s. Can I put 1 transmitter on each tv and just move the headphones from set to set? How are the headphones paired with the transmitters? Thanks.

I want to use the RS 175 system to monitor the output of an analog mixer that is part of a home recording setup. How much latency can I expect between the time the signal appears at the mixer and the time it reaches the headphones? I can't find any specs on latency.

there is no noticeable latency, as the RS 175 is designed for home entertainment system. They are optimized for Movies, TV and game playback and sound great. However that eq curve is not great for recording as it enhances bass response and dialogue. I would suggest one of Sennheiser's studio headphones for recording.

Can anyone compare the sound quality of the RS 175 to the Sennheiser HD 450BT wireless bluetooth headphones?

After a search, I am not finding much differences in audio. The main difference between the 2 will be the Wireless Connectivity. The 450BT provides Bluetooth to connect wirelessly to any other Bluetooth capable device. The RS 175 operates on Radio Frequency (RF) that interacts wirelessly with the Base. You will need to connect your audio source to the Base to transmit audio to the packaged headphones.

Yes, it should work. You would have to assign what audio goes out of the RCA connection if you have multiple sources you'd like to listen to.
