Does this work well with a remote camera for sporting events (i.e. putting it behind a soccer goal or on the floor at a basketball game)?
It very well could be but I would be concerned about my camera being damaged by a ball.

Will this work with a 400 f2.8 mounted on a gimbal?
I would doubt this will work properly with a 400mm and a gimbal, too top heavy and unstable.

Will this work with the Canon R5 & the RF 24-70 f2.8L lens ? Or would I need the Platypod Extreme ?
Yes, the Platypod Max Camera Support can handle the weight of the Canon R5 with the Canon RF 24-70 f/2.8 lens. The Extream is stronger and made for larger cameras but again the Max should be fine. But note you should use this with a tripod head.

Which of these is better for use with an Olympus ...
Which of these is better for use with an Olympus EM-1 with medium to bigger sized lenses? I'm worried about lack of stability with the ultra, but overkill with the max. I do plan on using heavier lenses as time goes on, and may upgrade camera systems in the future.
I would go with the Max, it is not overkill for what you’ve got or will have. Great tool, I enjoy mine, not an everyday used item but it does have some very unique abilities. Very well made and designed. I got the Oben BE-117 later but I see they now offer it with Max, great little arca ballhead. I’d also get the accessories for $15. I’d buy with confidence and enjoy!
