Is the PL-mount the ONLY version that you can get the GLOBAL SHUTTER with? I'd really want it to be compatible with my EF lenses. If so, is there an adapter available to use EF lenses on a PL mount?
Sorry, the Canon C700 with global shutter is only available with the PL mount. And also, there is no adapter for EF to PL or PL to EF. These two mounts unfortunately are incompatible in flange depth. Even if you were able to mount a certain lens on the opposite type mount, the distance from the lens to the sensor would be wrong and thus there would be no way to focus the image.

native iso?
The C700 was just announced so we do not yet know all the details on it. Please keep an eye on this page, as more detailed are released we will up date them here. That being said the other Canon Cinema Cameras (C100, C300, C500) had a native ISO of 850. That may be the native ISO of the C700 as well.

does the C700 have the option of sensor crop, for super 16mm lenses?
The camera is designed to accept EF or PL lenses for Super 35 recording or a B4 mount lens for a cropped 2/3 HD recording size. It many be possible to have a PL mount C700, use a Super 16 lens in a PL adapter and then select in the menu the B4 mount adapter setting. If it is selectable without the B4 adapter, the sensor is cropped. But then the image would be cropped as well for the Super 16 lens creates a larger than 2/3 image.

Is an external monitor necessary for monitoring video?
Yes, otherwise you will not be able to see what you are recording. You need to at least get the camera an EVF or electronic viewfinder. This one is recommended: Canon EVF-V70 OLED Viewfinder for C700 B&H # CAEVFV70.
