Would this Monopod work fine for a Sony FS7 for run & gun shooting?
This will work fine with an FS7 for run and gun shooting. I would recommend adding a head to it for additional flexibility.

I want to mount Nikon Z 400mm 2.8 lens along with Wimberley MH-100 Monopod head. Would i require any additionalARCA Swiss plate?
Manfrotto MVMXPROA4US Aluminum XPRO Video Monopod+ has a3/8-16 screw compatible with the same size threads on the Wimberley MH-100 MonoGimbal Head for Monopods. The MonoGimbal does not include an Arca Plate in the box. You will need to get a mid lenght arca plate preferably with an anti-twist bar.

Can this be used with a gimbal to get overhead video?
I don't know of any gimbal attachment but I do use it for overhead shots and it works great. Gimbals are way over rated and besides if you have the monopod in the air you need the camera angled at what you are shooting which is usually downward so you wouldn't want to use a gimbal. It has a good extension, you need to triple check that your camera is tightened down really well so it doesn't fall.
