I want to install a ubiquity mesh ap system that will be attached to a local IP that is radio frequency transmitted internet service. Can I use a Unifi M AP and attach via cat5 to \a switch inside a steel wall building to supply internet service to the inside of the building from the unifi mesh ap?
Yes but you should use a separate antenna/receiver to supply the network feed to the switch which would then be routed to feed to your mesh APs.

As long as it's connected via Ethernet to the router. It will not wirelessly connect to your xfinity router

I am not able to mount anything on my ceiling and would have to mount to a wall. Would this produce better coverage than a Unifi UAP-AC-Pro mounted on a wall? Thanks!
The Pro comes with several different mounting options from pole to wall mounts. It will wall mount just fine.

This is really not the right tool for that job. I would personally try to use something with a more directional antenna to get the signal into your space like the Loco then either hardwire to computer or another access point.

I would like to mount one on my back porch to provide wifi to my boat dock. The dock is about 300 feet away from the where I would mount the AP. Is this too far? It says 600 feet. I just didn't know if that was accurate.
I would run a direct burial ethernet cable to the dock and install this antenna at the dock or near the dock. That will give you the best performance. even if you just got half way you would be better off.

This will need to be at least plugged in for power. It is meant to extent the existing WiFi signal further in AP mode and repeat the signal with other UAP devices.
