Do you recommend this lens for used as a digital negative's scanner with a Panasonic Lumix GH4 camera?

Mitakon Zhongyi 20mm f/2 4.5x Super Macro Lens for Micro Four Thirds is too strong for that and doesn't focus to infinity so won't work well. I recommend this Panasonic Macro 30mm for that use. https://www.bhphotovideo.com/c/product/1124341-REG/panasonic_h_hs030_lumix_g_macro_30mm.html

How would focus stacking work with this camera, say on a Panasonic GH5s?

If any lens required focus stacking, it would be this one. Very high magnification and super shallow depth of field. Yes, focus stacking would be ideal for this lens.

Assuming you have set the camera to shoot with out a lens , make sure you adjust the f-stop and ISO and shutter speed to the lighting situation and that will do it

Does the lens work with the focus stacking function in the Xt-2 or would you have to move the subject for focus stacking? (subject shoud be on some kind of adjustable track I assume)

You have to manually focus or move the camera or the subject for focus stacking.

The front lens cap is a push-on type cap that you can pull with your fingers. The rear lens cap is a bayonet-type cap that will twist off in one direction and twist back on in the other.
