If I use an external recorder like the Ninja V for 4k does the bit rate go up compared to the internal 4k?

It most certainly does. The A7SII only records 4K at up to 100 Mbps and it is 420 8-Bit. The HDMI output is 422 8-Bit and a Ninja V records ProRes, which offers much less compressed files at higher Mbps amounts.

How does the A7SII compare to the A7III as a video camera with stills as a secondary function?

The Major different is the A7SM2 has about half of the sensor Megapixels of the 7M3. The 7M3 also had Phase/contrast auto focus and the 7SM2 only has contrast auto focus. The advantage of having about half of the Megapixels it allows the sensor to have a wider dynamic range for better low light performance.

What is the data rate Mbps in slow motion at 120fps? It lists it as "60-100Mbps." Is it a variable data rate like RED? (I want the best quality slow motion, also assume XAVC S is the best codec for slow motion).

It can do the job with 60 Mbps, but the best is 100Mbps.

How does the autofocus work with a metabones adapter and Canon EF lenses?

Typically all lens adapters are glitchy and work better with some lenses than others. As far as the Metabones adapters, they auto focus better than others. Additionally, the Sigma MC11 works well also.

Yes it can definitely shoot broadcast quality footage (or even better). It has a variety of resolutions and frame rates available to allow you match what is needed by your client. It has a micro-HDMI output. You can use micro-regular HDMI cables and go straight to your switcher, or HDMI-SDI adapters depending on what the rest of your setup is. I would recommend buying the AC power adapter piece if you are going to use it for a live production. The batteries don't last long, so being able to power it continuously is very helpful.
