No, the Pluto Trigger with Shutter Release Cable Kit for Select Fujifilm Cameras would not be compatible for use with the FUJIFILM GFX 50R Medium Format Mirrorless Camera. Instead, the Pluto Trigger with Shutter Release Cable Kit for Cameras with 2.5mm Sub-Mini Connections, B&H # PLTRIGGERRCC, would be the correct option compatible for use with the FUJIFILM GFX 50R Medium Format Mirrorless Camera.

Could this receive an infrared signal from the Foldio360, and thus trigger a Fuji X100T?

The Pluto Trigger is not a receiver; it is an infrared transmitter. It can be used to trigger the Foldio 360, or it may be used to trigger the Fujifilm X100T with the included Vello 2.5mm Remote Shutter Release Cable for Select Fujifilm Cameras, but not both at the same time. As the Fuji X100T does not have an infrared sensor, it only works with the Pluto Trigger when the Pluto Trigger is connected to the camera's remote terminal via the Vello 2.5mm Remote Shutter Release Cable for Select Fujifilm Cameras. When it is plugged into the camera to operate as a wired remote, it will not operate as an infrared remote.

But which Pluto cable is included? I need the E3 cable for my Fuji XT-2. But Pluto makes other cables for other Fuji models. So which cable is in this box?

By itself, the trigger comes with NO CABLE, that is why you are much better off getting the correct KIT for your camera. I would advise to also by an extra cable, it makes sense to have a spare. Goods luck with this, I love mine!
