Why is there no magic shift converter for the Sony E mount version of this lens?
The Magic shift converter was created as a combination adapter and tilt shift converter. The E mount version of the lens would need to have a converter to a different mount to be able to work with the geometrics of this lens when used as a tilt shift.

Hi. If I buy the kit (Laowa 12mm Zero-D and Magic Shift Converter), have to buy a Canon EF to Sony E converter if I want to use the Laowa 12mm without shift capabilities?.
If you wish to put this lens without the Magic Shift Converter on an E mount camera, yes, you need a EF to E mount adapter.

Is the Canon EF version compatible with the ZhongYi (Mitakon) to Fuji XF Lens Turbo focal reducer? I.e. the rear element doesn't touch the glass elements in the focal reducer.
This lens is compatible with the Mitakon Zhongyi Lens Turbo Adapter V2 for Full-Frame Canon EF Mount Lens to Fujifilm X Mount APS-C Camera, being that it is a full frame lens.

would this work well with the z6 and the ftz mount adapter?
The Nikon F mount version of this lens will work very well with the full frame Z cameras and the FTZ. You will program this as a non-cpu lens in your camera, 13mm f/2.8 (as Nikon never made a lens to date wider than 13mm so it's the widest that can be programmed at this time).

I get severe distortion on both sides of images ...
I get severe distortion on both sides of images in the form of stretching. Is anyone else having this issue or do I have a defective lens?
That sounds like perspective distortion. That is normal. For example ceramic tiles on a wall will look larger, distorted, and stretched in the sides of the photo, but in the center they will look normal. That is perspective distortion. That is the same as going on the bottom of a large building, looking up, and the sides of the building look like they are converging instead of being straight. The zero distortion this Venus Optics Laowa 12mm f/2.8 Zero-D Lens has is barrel distortion.
