Does this cover fit the all models of Minolta XD series, such as XD7?

I believe, but I can not say with any certainty that the XD models have the same body design (even the ones I noticed in the photos and information on the internet.) I drew based on the minolta XD, you can prove to use the dedicated cover for Minolta XD in its Minolta XD11. If it should not, (due to a different dimension) you can always use the Universal cover that comes along with the I'm Back.

How does the Back work in digitizing images from a film camera?

The principle is simple. A - In the place of the film we have a focusing screen where the image was formed B- A small but powerful 16 megapixel internal camera captures the image that was formed (therefore without crop but of the entire area 24x36mm) C- To connect the I'm Back to camera you use a Sync flash cable D- Set to B, select the desired shutter aperture and click E - The image is formed, the camera registers and saves in a memory that you have chosen up to 64gb D - You can transfer the images to your cell phone or if you wish you can use the cell phone as a display and execute the photos by clicking on your cell phone. D - In the same way you can make videos with your analogue and they will have a vintage flavor and not the digital one that we are accustomed to, due to the image being formed in the focusing screen, which softens the image.
