Is it possible to fold it down with the black parts outside? in the video the white parts are outside, they will get dirty in no time?
No not that I have figured out the non-velcro hinges are more single directional. However I haven't had much of an issue keeping them clean in when they are not in use since it comes with a big carry tote.

No. It's made out of foam board and probably won't get handled well. The v-flat would probably get dings and dents or even torn in the process. So I wouldn't.

Half inch foam core. Plenty sturdy and does not warp over time like thinner boards.
