Looks like 7 adjustment knobs - are these all necessary? What do they adjust and do they get cold or are they rubberized?
Yes, there are a lot of knobs and they all have a purpose. The top big knob locks the heads tilt. The lower big knob locks the main arm in position. Usually the arm is upright, but for storage or travel, you can invert the main arm. On the base, the medium knob is the pan lock. The smallest knob, when engaged, is an ingenious click-stop which will aid greatly when doing panoramas. On the main arm there is a knob to lock in the L bracket. You can remove the L bracket and then directly mount your camera if it has its own L bracket. On the bottom of the Fotopro L bracket is a knob for locking the Arca Swiss plate. Finally, on the L bracket is a knob that attaches the pan handle. As a former movie camera operator, the pan handle is what you need for "BIF" or following a "Bird In Flight." The knobs are metal and because when it is cold you are likely wearing gloves, their being metal should not be an issue.
If you like a high degree of control I would say this head is for you.

No, the Fotopro Eagle E-6H cannot be tilted left/right without a leveling base. You are correct in your assumption; of all the ones we are familiar with, we believe none possess this capability.

In the picture which shows the telescope attached, I notice that that the plate orientation on the sidekick (??) has been changed from vertical to horizontal. Can this be changed?
The customer has removed one of the components to allow for vertical attachment. Basically he removed the L bracket from the vertical clamp and clamped the telescope directly to that clamp with the Arca plate that is supplied.

Yes, the plate of Manfrotto quick release (200 PL type) that I have can be attached to the gimbal.
However, I found the gimbal tilt action is not smooth and fluid as expect even when the tile controlled screw is fully loosed.

Yes you can. But I only do wildlife and only use 600. F4. Or. 400. F2.8. I don't do marsh panoramic
