Would the Wimberly AP 500 replacement foot attached to a Nikon 500 5.6 pf fit securely on the head?
Yes, the Wimberley AP500 quick release replacement foot will work with the Peak Design CF travel tripod. You will first have to remove the two small safety stops from the built-in head in order for the tripod foot to fit.

It is feasible to use a 500mm lens on this, weight wise?
I don't know if I would put a prime 500mm lens on this tripod, maybe a zoom to 500mm but not a prime. I don't think it is robust enough for such a heavy and costly lens.

Is the mount compatible with the peak design dual plate v2?
Yes, but it only fits sideways (if you consider the bubble level the front/back). If you shoot in portrait orientation the 3 legs on the head limit the panning range of motion. If you plan to shoot a lot in portrait I would go for the regular peak design plate (which comes with the tripod).

Can this fit INSIDE the peak design 20l everyday backpack or only outside?
I’m sorry I don’t have the Peak Design Backpack you referenced. However, most of the pics I’ve seen show the tripod inside of it’s bag and sitting inside of the pouch on the outside of the backpack with a Peak Design Strap attaching it securely to the backpack.

The Compact Ball Head on the Peak Design Travel Tripod does not have an independent panning function. For our first foray into ball heads, we prioritized space savings and a streamlined interface based around the most common workflows we saw in R&D and user research. Using the Peak Design ball head ring creates a unique and delightful workflow that is different than typical ball heads and we encourage you to give it a try without comparing features 1:1 with other heads.
We are aware that the Compact Ball Head may not be ideal for the video-making community or folks who use panning in their photography. Because of this, we hope to have a pan/tilt video in our future product roadmap or an adapter that would work with this current ball head. Similarly, we are closely following feedback about panning functionality and it may similarly influence our development roadmap.
For now, we have an add-on adapter that allows our tripod to be used with any 3rd party ball head using a traditional 3/8” screw. If you use panning frequently, this adaptor allows for the integration of that specific functionality. Additionally, we have seen some folks using panning adapters on top of our ball head.
