What does "Shimmed PL mount" mean? Can you switch the lens mount to the other lens mounts offered by RED? (Like Nikon and Canon lens mounts.)

You can shoulder mount the RED Ranger cameras. The RED DSMC2 shoulder rigs made by SHAPE, CAMVATE, Smallrig, ARRI, Zacuto, Bright Tangerine, etc. are all compatible.

There's an antenna on the body but I can't find any information about what wireless functionality it provides. Camera control only through an app?
That is an External R.C.P. WiFi antenna. You are correct, this would be to use Apps with the camera. According to RED the most popular app is FoolControl, which does give you a wide variety of control over the camera.
