What is the RPM of this drive? Why isn't that in the specs? Super important for video editing especially with 8K raw.

This would be a 5400 rpm drive in this unit. For editing 8K raw content I would recommend an external SSD.

It would be heavily dependent on what generation of iPad pro. If it was the 3rd and 4th generation the SSD equivalent would be preferred for heavier task such as video editing. This would work fine for smaller files such as documents and photos.

If you have one, try a different cable and/or computer. The drive comes with a configuration application that you can also download from the G-Tech web site. Try downloading and running it with the drive connected to your computer. Good luck!
