I'm not a pro and can't dedicate a dark, or consistently lighted room to editing. Can I set multiple profiles to use depending on current conditions (daylight, night with lights on, etc.)?
Yes. I have several profiles created for photo-day, photo-cloudy, and photo-night as well as video-day, video-cloudy, and video-night. Once created, you switch between the various ones in your operating system "monitor" preferences

Can I use this to calibrate my external monitors for my cameras? My 5" and 7" monitors?
As long as your monitors have the ability to get a signal from a computer (for use with the Xrite software), in a resolution of 1024x768, and have contrast and color controls that can be manually set, the X-Rite i1Display Studio Colorimeter should work fine for calibration of your monitors.
