That is correct, the grip allows you to use 2 batteries, not 3.

Will this work with the easyCover silicone protective cover in place?

Sadly this will not fit together, the silicone skin does not allow the 1/4"-20 to screw in properly and the pins for the battery grip don't make sufficient enough contact to operate.

Can you use the usb-c port to charge the batteries in the grip using an external power bank (i.e. when you are outdoors without access to a power outlet)?

There is a USB port on the rear of the MB-N10 to charge the battery pack with the Nikon EH-7P charging AC adapter. I see no reason why this can’t be done using an external power bank.
