This cannot print directly onto a shirt no. But you could print to iron on transfer paper designed for inkjet printers.

Does this printer need the multi-function roll unit accessory to be able to print from a roll?

No, the Canon imagePROGRAF Pro-4100 Printer does not need the Canon Multifunction Roll Unit RU-43 in order to print on roll paper. The roll unit allows one to load a second roll of paper, or it can be used as a bi-directional uptake unit. It is not necessary for the core operation of the printer.

I print mostly 8x10" size art prints on fine art paper. Would I use a roll of paper or sheet feeder?

The Canon imagePROGRAF Pro-4100 Printer is made to print on rolls but you stack about 2-3 sheets at a time. Depending on the volume you are printing it might be better to print your 8x10's on a roll and trim them.

What are the dimensions of the printer unassembled? My doorway is 31 inches and I keep reading different answers

The Canon Pro-4100 printer without the stand is . 62.8 x 28.9 x 24.8 inches. The stand alone is 56.4 x 30,2 x 21.2 inches.

Canon does not publish/provide that information. This is a rather tricky question to answer. Most modern printers use the printer driver (and/or computer OS) being used for a print job to determine the bit depth of a printed image.
