That would be more of a camera specific issue than a memory card specific issue. I shoot with #2 as backup on a Z9 and they have performed wonderfully.

No, the only cards that the GFX 100S will take are going to be UHS-I and UHS-II SD cards. I would recommend using a UHS-II V60 at least to help reduce writing time.
