Most canvas is going to be over the printer tolerance of 11.8 mil / 0.3 mm. The T34775 would not be a great choice for printing on canvas no.

I see that the printer's Max Resolution is 2400 x 1200. Can it print at a lower resolution for the sake of speed versus quality, say 1200 x 1200 or 1200 x 600?
Yes you can print at lower resolution.The standard resolution options are
300 dpi

1200 dpi

Can the Epson T3475 print on transparent film for Screen printing and does It work with the Accurip program?
I am a screenprinter and have recently replaced my dead T3270 with this printer. It handles transparent media (Autotype Zeta HD in my case) just as well as the T3270.
I have not used it with Accurip yet but as this printer seems to be a direct replacement for the discontinued T3270 I would expect Accurip are adapting their software for compatibility with this machine.
