Would this work in a OWC ThunderBay 4 48TB 4-Bay Thunderbolt 3 RAID 5 Array? What kind of performance for video editing can I expect?

first off RAID5 is a bad idea with size of these drives and time it takes to rebuild. if you review the chances of failure with large drives such as these and times it takes to rebuild. you will see you have a roughly 2 percent of complete raid failure in 5 years and 4% in 10 years. if you use RAID 6 instead the probability goes down to zero. I strongly suggest using RAID6 to store important data. expect around 249 MB/s for RAID6 and 349 MB/s for RAID5

You would want the SATA III model which is BH #SEST16000NM1. The Lacie enclosures don't use SAS and eSATA is an external connection so it is not on an internal drive.
