i have a 15-30mm g2 and 70-200mm g2 from tamron ...

i have a 15-30mm g2 and 70-200mm g2 from tamron w/ my d750. is it worth it to sell my whole kit in favor of a new purely mirrorless setup? should I just upgrade the body and get the ftz adapter so I can keep my lenses? or should I just upgrade to something like the d780/d850? i mostly shoot weddings but sometimes do sports and filmmaking on the side. thoughts?

Yes you can! The camera will automatically crop in to give you the APS-C framing. When this happens you do lose resolution. If you are using a F-Mount APS-C lens make sure you have the adapter.

How does the Z6II compare to the D500 for focusing on random moving targets like birds?

I wouldn't sell your D500 before comparing for yourself. Spec sheets with new technology won't answer that for you. My early tests still give the advantage to the D500 for BIF at the moment. The Z6ii does show moderate improvements over the Z7 for portrait autofocus (which can be more or less important to you depending on how you shoot).....but I'm not selling my D500 yet.
