Yes. With two SD cards installed RAW will be saved to one and JPEG to the other. Provides a bit of a safety net.

Yes, you can definitely make your own "recipe" as it's called in the Fujifilm Community. You would use one of the built in profiles as your base and then add your own touches to everything. It's pretty flexible and fun to experiment with different looks.

I use the X-T2 flip LCD often with L-bracket from a tripod for portraits and landscapes with camera at waist level. Is this possible with the articulated LCD positioning - can I get the same functionality from the articulation as I can from the X-T2 flip?
What l-bracket do you use that doesn’t interfere with the full range of this screen articulation.
