How doe the LH-40 compare to the LH-30 for loads of 4-5 lbs, such as a FF camera and a 24-70/2.8?
Either will work but the LH-40 has a much higher load capacity and would be more suitable for your setup.

Has anyone used this head in subzero temperatures, say -5 to -10°C? If so, is it still smooth?
Leofoto tests their equipment down to -40°C. The Leofoto LH-40 Low Profile Ball Head with Quick Release Plate (Black) should perform down to that temperature smoothly without issue.
