It looks like you have to purchase at least 1TB of storage before the 16GB of memory is included, is this correct?
The new iPad Pro comes with 8GB of unified memory and 16GB for the 1TB and 2TB models, but you shouldn't have any problem with either of them on iPadOS; the 2020 model has 6GB of RAM and it outperforms most PC laptops.
