Is the mount plastic? It looks like it is - all black mounts from Nikon have been plastic. I would hope a full-frame lens from Nikon wouldn't use a plastic mount.

Compact & pancake lenses can get away with using a plastic mount because theyre very light and short, creating a negligible torque moment on the mount. This reduces wear on the bodys lens mount and improves its lifespan as well. Heavier, longer lenses need metal mounts. Be glad all lenses dont.

Does anyone make a square lens hood that will fit on the 28mm Z mount lens?

Nikon NIKKOR Z 28mm f/2.8 (SE) Lens has a 52mm front thread. You can use a low-profile circular or petal shape lens hood. The lens does not have a bayonet mount for a dedicated lens hood nor there is a square lens hood with a 52mm clip or screw-on option.

I am a bit confused, it states that it is a DX ...

I am a bit confused, it states that it is a DX format lens, but states it is compatible with the Z6/Z7 cameras. Will it function in FX mode on a Z6/Z7 camera? If so, I could see this lens being a nice compact video lens with a gimbal.

This is a full frame FX lens. You can view the true specs on the Nikon website. On a full frame camera you will get a 28mm field of view (FOV) on a crop sensor DX camera you will get a 42mm FOV. This lens will NOT engage DX mode on a full frame camera.
