Yes, by having a much higher resolution the Fuji GFX 100S produces better quality photos with greater image detail and a higher dynamic range compared to the GFX 50SII.

The FUJIFILM GFX 50S II Medium Format Mirrorless Camera has a mechanical focal plane shutter and an electronic shutter, not a leaf shutter. The maximum standard flash sync speed would be 1/125th second. If you use a flash that supports FP High-Speed Sync, then the maximum flash sync speed that may be used would be 1/4,000th second.

Very novice question. Can Nikon DSLR lenses be used with this Lumix camera using some kind of adapter?

Lumix is Panasonic, this is a Fuji camera. Yes there are several different adapters available, whether or not the lens vignettes will depend on which lens you use. There is also a Laowa optical adapter which expands the field of view and adds a 1.4x multiplication factor that allows almost all lenses to completely cover the sensor.

There are several adapters that allow you to use a full frame lens on the FUJIFILM GFX 50S II Medium Format Mirrorless Camera. If the lens is longer than 90mm you usually don't get any vignetting. If it is smaller than 90mm than you do get vignetting and have to crop in post. If you crop you lose resolution.

Yes, the FUJIFILM GFX 50S II Medium Format Mirrorless Camera has a B+W mode. It is called, Monochrom Color. It is set from the Image quality setting in the menu.

What does 35mm crop mode do on a native GFX lens? Say you had the 80mm F/1.7 which works out to be a 63mm F/1.3 in full frame terms. Does that 35mm crop mode turn the lens into a true 80mm F/1.7?

Correct, medium format lenses are all mesure by 35mm equivalency. When you attached a FUJIFILM GF 80mm f/1.7 R WR Lens to a medium format sensor it's angle of view becomes 63mm lens. If you select the 35mm format mode on your FUJIFILM GFX 50S II Medium Format Mirrorless Camera then your 80mm lens angle of view will remain as true 80mm lens.
