I've been in the video production business over ...

I've been in the video production business over 40 years now. Back in the old days we were told to always use external hard drives for editing video which I always did. It had to do with not so reliable internal drives in the computer back then. I'm just wondering if with todays much more advanced technology if it would be ok to use the internal drive for editing in this new Mac Studio with these fantastic internal very fast SSDs? I don't know if it would put the computer in stress mode or not. Anyway, just trying to figure what I want to do. Thank you.

Using an internal SSD is far more reliable than using HDD in older computers. Editing off the internal drive is going to be fine, and is even the preferred method for most editors.

Is the internal SSD faster than buying an external SSD? I'm considering the SanDisk Extreme Portable 2 TB which advertises read speeds of 1050 Mbps, I want the best performance for 4K video editing

The internal storage on Mac Studios is very expensive, but it's extremely fast - about 5500 or 6000 MB/s as Seng Mar wrote below. You feel that immediately, because everything opens ridiculously fast. Example: Affinity Photo opens in 2 seconds vs. about 25 off SATA SSDs in my previous Mac. If you put a high-spec m.2 SSD in an enclosure that supports Thunderbolt 3/4 (or USB 4.0, same port) and use the appropriate port on a Mac Studio, it'll test at about 2600 MB/s read/write in Black Magic Speed Test - fast enough not to be a factor.

If the M1 Max is so fast, could I get away with less RAM? If M1 Max, and editing video (in DaVinci Resolve), from two cameras, 4k & 6k, how much RAM will be sufficient? 16GB?

Mac Studio doesn't have a 16GB RAM option. It has minimum 32GB upgradable to 64 or 128GB unified RAM memory. Mac mini M1 has 8 or 16GB unified memory.

For editing in adobe premier and after effects. Does having additional cores of an ultra processor with 64 vs 48 core really make a difference rendering?

In general, the benefits of the 64-core GPU will only be seen under extremely heavy workloads. The average user will not see a significant benefit, but in the future as file sizes and workloads increase alongside innovation the extra cores may become more useful. I would consider it to be optional for the average user, but advantageous for "future-proofing."
