How would the z6II compare to the D810?
Nikon Z6 mark II has less megapixels but its native ISO will allow you to take images with less noise at a higher ISO range than Nikon D810. Full frame mirrorless cameras are also very advance with autofocus speed and Video performance. Mirrorless cameras also have electronic view finders which could be an advantage when you shooting in low light situation. If you want a camera with similar amount of megapixels as the D810, I will recommend Nikon Z7 Mark II.

i have a 15-30mm g2 and 70-200mm g2 from tamron w/ my d750. is it worth it to sell my whole kit in favor of a new purely mirrorless setup? should I just upgrade the body and get the ftz adapter so I can keep my lenses? or should I just upgrade to something like the d780/d850? i mostly shoot weddings but sometimes do sports and filmmaking on the side. thoughts?

It is possible to record from the Z6 without an external monitor in N-Log to capture flat-looking footage that maximizes dynamic range and to record HDR-ready footage. Ability to generate high-quality 10-bit output or remain 8-bit?
The camera is capable of producing N-Log only through an external recorder. The closest you can get to that internally is by shooting in flat picture profile.

Yes all F-mount lenses will work with FTZ adaptor on the camera. Also, F-mount lenses AF-S, AF-P (and may be some others) will work with automatic focus as well.
