You can map the SSL UF1's controls to control plugin parameters through your DAW, the same way you would with a typical control surface.

Does it work with Mixcraft? And does it work with ProTools?

The Solid State Logic UF1 is specified to work with Pro Tools, and comes with a DAW profile for Pro Tools. Mixcraft compatibility is not specified, and although it will likely be compatible there is no Mixcraft profile included and as a result manual setup will be required.
