How do these swivels work, since most strobes' 5/8 receivers are on the bottom of the strobe (not centered behind it), so then, with a softbox, the entire assembly will be at an angle by the time it levels out on the swivel, no?
Correct, your light will hang upside down from what you're used to. This removes a lot of the stress on the connections. Make sure you use a tether just in case you don't tighten something down. Cheers.

Is the baby pin section of this device constructed of steel or aluminum?
Steel. Works well. Have an adjustable wrench at the ready the first time you use it to tweak the drop down friction. Once set that is it. Matthews stuff is designed by pros who have used the stuff on set.
