I want to convert 3200K to 5000K. Which strength do you recommend? And do you stock smaller sheets?

In order to do that you would need a 3/4 CTB and a 1/8CTB stacked. The 20x24 sheets are the smallest individual sheets we have.

Will this melt if I put it next to my speed ring on an Arri 1k open face?

These gels are heat resistant but will eventually fade and distort. I've only seen them melt when in direct contact (or very near proximity) with a halogen lamp. I think you'll be ok for awhile if the gel is on the outside of a lensed speed ring. Maybe check for sure with Rosco or Lee.
