How tight of a fit would it be to load a 5 reel 35mm developing tank?
I think it would be very tight, but if you are organized and systematic it might be possible. I feel like I max the bag out with 5 4x5 film holders and two film boxes.

Can this bag be used in a pinch to change lenses? Can I use it in the field in less-than-optimal conditions for that purpose?
I wouldn't. The amount of dust and such trapped inside would be excessive. I'd rather just swap out my lenses in the open air.
