It comes with only one. You would have to purchase the others. The reviewers all rave this system is worth every penny. I would suggest get one and soon you will know if you want more than one.

I am guessing it is necessary to have the mag mod grip in order to use a grid?

That would be the normal way to use it but you could probably attach it directly to the flash with a couple strips of gaffers tape.

Can the magnets damage your memory cards if they are in close proximity?

I have not encountered that. I think close would have to be pretty much sitting right next to the magnet to be a problem.
