The microphone seems really quiet on playing back recordings is this normal?

Transcend DrivePro Body 30 1080p Body Camera BH #TRS64GDPB30A should be worn high up on the chest or shoulder. Make sure that Audio and Audio buffering are switched to the "ON" positions.

Warranty is included but what about the battery and the clip to attach it to a vest or shirt? Also, is it compatible with MacOS Catalina or MacBook Pro?

The battery is built into the camera and is covered under the camera's two year warranty. The clip is not covered but replacement clips can be purchased separately. The camera and software are compatible with Mac OS 10.14 or later

Yes, you will be able to turn off time-stamp on the Transcend DrivePro Body 30 1080p Body Camera. Command: Video Stamp: Display the Video Label, date/time, and Watermark on the photo or video. Available options: Disable / Enable

You will need to download the Drive Pro Body application on your phone and connect to the WiFi signal produced by the body camera.

Does this work while charging? My thought process is possibly using this as a dashcam and wearing when needed.

I don't see a reason why not and none of the documentation say anything one way or the other, however, it does say that while the unit is plugged into the charger then it is not water resistant.
