YoU can connect two simultaneously. Not three. The Hiz instrument input “cancels” the first mic input if you connect a guitar or bass into the instrument input. So two microphones, or a guitar and a morphine. Not 3

Yes, it should work just fine, as long as you have Thunderbolt 3 USB-C type connections on your machine.
