It didn't work in the GH5 to parry it whit a gimble, but it does in other models

I'd love to know is this a 2.5mm TRRS connector and if so, is it compatible with LANC compatible cameras, e.g. Canon C300 Mark III, etc...?

No, this is specifically designed for the RS2 and RSC2; no other pairing can be confirmed.

For a supported camera that has a USB-c port and a remote port, will this cable give more features over the included USB-C on the RS2? or is this for cameras that don't have a USB-C input?

This cable is for select cameras only. For example it works with the GH4 and is the only cable that does. If you have a camera like the GH5 this is not compatible, you would use the USB-C cable.
