You can turned off the Live View Display Effect under the Shooting Menu - #9 Shooting Display- Live View Display Settings. This setting turned off the camera exposure simulation and allow you to rough the view finder or LCD under low light conditions and low manual exposue mode.

Given the sensor is similar to the a7r IV but the processor is faster, will EVF lag be similar or improved compared to the a7r IV? blackout at high image capture rates?
Sony didn't specifically claim reduced lag as a benefit of new processing, but it's worth noting that the EVF is wholly new to the a7R series and there should be a pretty noticeable improvement in viewing quality for general use (higher resolution and magnification). There are also no claims about blackout during continuous shooting, which is likely a product of this not being a camera that is targeted for the ultra fast continuous shooting needs. I think it will perform fine but won't be on the same level as a camera like the a1, which is specifically designed for continuous shooting and points out the blackout-free viewing experience.

Although the new image stabilization is amazing on the A7RM5, you would have to consider the following factors that would affect overall stability of the video footage; camera settings, ambient light and user's stability.
