The Sirui PH-20 Gimbal Head is a great solution to the problem of shooting moving subjects with a long telephoto lens. Ball heads and 3-way heads can be cumbersome in fast-moving situations, but the gimbal head makes your camera and heavy lens seemingly weightless, and you can smoothly and precisely track fast-moving subjects.

This is not a fluid head, but it will allow you to position a long telephoto lens attached to your camera more quickly without having to unlock it all the way.

I don't know why you couldn't. I have used mine on a Benro tripod and Ifootage monopod with no problems. Great thing about B&H is that if it doesn't work you can return.

Currently own a Sirui EN-2204 tripod, how will the Gimbel Head PH-20 work with that and a Nikon 200-500 mm lens?
This gimbal head will mount directly onto your current tripod. This will easily support the 200-500.

I purchased this Gimbal Head which came with a arca style quick release plate that attaches to the camera. I would like to purchase an extra quick release plate, however I don't see any of the same models that came with the head. This one is a very long plate with two thumb screws on the bottom, like in the picture above.

Is there clearance to mount a camera with a normal lens. I'm assuming the body will be much closer to the curved bracket and am thinking it may not clear. For example will OM-D with 12-40 mounted work for panoramas?.
By design, a gimbal head would not have enough clearance to mount the camera directly to the head. Gimbals are designed to connect a lens with a tripod collar onto the gimbal, where the lens is much narrower by design compared to the camera body. Two options that may work would be to purchase a monopod head to increase the clearance of the camera, such as the Sirui L-10 Monopod Tilt Head, B&H # SISUL10. The second option would be to purchase the Wimberley P5 Universal Quick Release Plate, B&H # WIQRPP5, and the Wimberley Module 8 M-8 Perpendicular Plate, B&H # WIM8, which would allow you to mount your camera and allow you to slide the camera forward or backward to orientate the camera on the head. (If you already have an Arca-Swiss quick release plate for your camera, then the P5 plate would not be needed).
