Turning roll into sheets

This paper prints out to my exacting specifications. Used on Canon Pixma-Pro 100 as 13x19 and 8.5x11 dimensional sheets. I trim roll paper into sheets by hand, and enjoy substantial cost benefit from doing so. The 24 dimension is reduced to 13 &11 lengthwise, after which individual sheets are trimmed; approx 66 and 144 sheets are produced respectively.

gets YELLOWED

I switched from Epson Enhanced Matte paper to this paper which costs twice as much as Epson. I switched because the paper is supposed to be acid free. I thought that I would be safer this way. After using this paper for a major project, I see that the paper is already yellowing. This is very visible especially on the white borders. The Epson Enhanced Matte is not supposed to be acid free and I have never seen it discolor.
