Is this paper compatible with the ImagePROGRAF TA-30 36" Large Format Printer?

Since Canon has a 36" adhesive, you should put the settings to that profile and then the paper should work.

Will this paper perform well on a Canon Pixma Pro-100?

No, this would not work with the Pro 100 for a few reasons. 1) The Pro 100, would only print on single sheets, this is a roll2) This paper is a 36 roll and the printer can print a max of 13x19
