question
Can an iPhone 6 or 7 supply power to a RODE Video Micro or RODE Video Mic over the Rode SC7 3.5mm TRS to TRRS Patch Cable?
The iPhone 6 (with 1/8 TRRS input) can supply power through the Rode SC7, but I have heard from users that RF noise can be induced into the audio line. A quick fix might be recording in airplane mode.

will this work with a Camera as well? ...
will this work with a Camera as well? Particularly a Sony Mirrorless microphone input?
This cable is specifically made to take a typical TRS 3.5mm mic and convert it to connect to a TRRS mic input on a mobile device. It would not be appropriate to connect this adapter cable to a camera, and I cannot guarantee that it will work for that purpose.

For iPhone models without a 3.5mm input port, the Apple Lightning to 3.5mm Headphone Jack Adapter (B&H # APLAADAP) is the suggested adapter.

To use this cable with a modern iphone, you must ...
To use this cable with a modern iphone, you must use the apple lightning adapter (no 3.5mm jack in an iphone) - is this a barrier? I am getting no sound when recording video with an iphone, and since this is supposed to work with iOS, I assume the adapter is the issue? If so, are we expected to use iphones from 8 years ago for this to work?
It works fine whenever I use the iPhone adapter. Are you putting the black end in the mic and the grey end towards the iPhone?
