Please clarify - are you saying this mic will not work while recording video with the iPad?
Typically this function will be app-dependent. The recording app yu are using must allow an external microphone and will also sync the recorded audio with the video.

Why will this not work with my iPad Pro? It works fine with my iPhone 6, and a Rode smartLav works on the iPad, but this MXL MM-110 will not send audio to the iPad. Any suggestions?

would this mic work in a larger room setting? where participants are farther apart?
There is some latitude depending upon the strength and timbre of the participant's' voices and the acoustics of the room.

The cable connection to your smartphone/mobile device would be a TRRS connection with a headphone tap available for monitoring with compatible apps.

According to the video B&H attached to this product's Specs page, it should work with video recording or any other use of audio on your iPad.
