Would the headphone output produce lower quality sound? I'd like to use this for field work and also for recording podcasts while mixing several inputs (skype, music, etc).

No the headphone out will not produce a lower quality audio signal. In fact the 3.5mm headphone jack doubles as line out.

Can this be used stand-alone, without an iOS device? If so, what kind of power would need? I'm wondering if it can be powered externally, then plugged into a camcorder. (Or is there an equivalent Zoom product that doesn't need to be hacked to work with a camcorder?)

The iQ6 from Zoom is an iOS only device. Unfortunately Zoom does not currently offer a product similar that works standalone. For a stereo recording option for a camcorder, I would recommend a more traditional camera mountable , battery powered mic. Senal offers a compact solution, the SMS-45. http://bhpho.to/1yN4UPN

I need to point this mic at a subject while recording video on a phone. How is that done as it looks like it points toward the floor if one were to record video. Is there an adapter available? Or how can the mic be pointed at subject?

I do not think it is possible, but I have not tried with a thunderbolt extender of male and female adapter. For this same reason, I went with another one by this company called iQ5 Zoom, which works much better for shooting video.

The Zoom iQ6 Stereo X/Y Microphone for iOS Devices with Lightning Connector can be used with a wide variety of video/audio recording applications, but it will not work with your default phone app. iOS requires a Bluetooth or TRRS connection for phone calls or other functions of the phone app.
