Does this take the left and right channels from the 3.5mm source and send each separately to the XLR connectors, so that one of the XLRs will be the left channel and the other the right channel?

Yes, that is correct. the 3.5mm TRS connection splits the signal separately to the XLR male connectors as Left (Blue) & Right (Red).
