Can you save to this drive at any time or does it only automatically save once a day to back up?
Yes, of course. You can use it as a regular drive and save files to it at will. For example, I do not use the bundled backup software.
If you do not need the automatic backup, simply do not install the bundled backup software. Then you have 6TB to do anything you want to store at it whenever you want.

You can have this Hard drive either Horizontal or vertical. It will not matter which way it is sitting.

Does this support Windows 11? Owner manual pdf says windows 10, WD website says 10+.
I am using it with 11 just fine. Had this box well before 11 came out so the specs may not mention 11. Have no fear.
