how well do these hold up to sweat from a boom operator on an outdoor set on a warm/hot day?
They are not sweat or weather resistant, but they are well made. Impossible to predict, but average sweat and humidity should not effect the performance or reliability very much.

Nope. Beautiful sounding headphones, but no mic.

Are they closed back?
Yes, they cover the ears entirely. The only downside in my opinion is that the bass isn't the best, but if you boost it on iTunes the product gets better.
